A Cut Above | A Tuna Cutting Ceremony 7:00 PM – 10:00 PM Experience the energy of Tokyo after dark as Aperture transforms into an immersive nightlife escape inspired by the neon pulse, culinary artistry, and vibrant nightlife of Japan. For one unforgettable evening, guests will step into a high-energy atmosphere filled with live entertainment, elevated cuisine, music, movement, and interactive experiences designed to transport you straight into the heart of Tokyo’s after-hours scene. The centerpiece of the evening is a dramatic live whole Bluefin tuna cutting ceremony by Chef Armando, showcasing the precision, artistry, and tradition behind one of Japan’s most celebrated culinary experiences. Guests will enjoy the freshest Bluefin tuna throughout the night as it is incorporated into live culinary activations including poke, tapas, sushi, and sashimi crafted in real time by Chef Armando and a guest sushi chef. The evening continues with immersive geisha and samurai performances, creating a visually stunning celebration of Japanese-inspired culture and entertainment. Guests will also enjoy a special appearance from celebrity bartender Peter Madrigal of SUR and Vanderpump Rules, serving elevated cocktails alongside curated Japanese whisky, champagne, and signature specialty drinks.
